Thanksgiving Leftover Pot Pie

I love coming up with new and interesting ways to use up leftovers from holiday meals. This year, I came up with the idea of a turkey pot pie with a stuffing topping. Having all of the ingredients already done made this an exceptionally easy meal and my kids loved it. The other nice thing about this is that you can really put whatever you like and whatever you have on hand in it. You want to add leftover green bean casserole? Go for it! Leftover gravy acts as the sauce and the stuffing topping replaces the crust. Simply toss the ingredients together and pop it in the oven until heated through.

Ingredients:

  • 1 tablespoon butter, room temperature
  • 1 cup mashed potatoes
  • 1 cup cooked turkey, diced
  • 1/4 cup gravy
  • 1/4 cup frozen peas
  • 1/4 cup frozen corn
  • 1-2 cups prepared stuffing

Instructions:

Preheat oven to 375 degrees.

Butter an oven safe casserole dish and spread mashed potatoes in an even layer. In a medium bowl, combine the turkey, gravy, peas, and corn and stir to combine. Add mixture to casserole dish and top with stuffing. Bake for 30-40 minutes or until heated through.
