Gazpacho with Harissa Oil

Gazpacho is a cold soup, yes cold, that is so refreshing and delicious in the summer when all of the vegetables and tomatoes are at their peak ripeness. With a few simple ingredients, you can cool off with this flavor-packed and healthy chilled soup. Ingredients:

  • 1 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 1 clove garlic
  • 2 roma tomatoes, quartered
  • 2 kirby cucumbers, chopped
  • 10 oz. V-8 (I use the spicy flavor)
  • 1/2 lemon, juiced
  • 1/2 teaspoon salt
  • 1 tablespoon Fiore Harissa Oil www.fioreoliveoils.com
  • 1 tablespoon Fiore Sicillian Lemon Balsamic www.fioreoliveoils.com

Instructions:

In a food processor, pulse the ingredients, making sure not to puree them too much. This soup is supposed to be textured. Chill in the refrigerator for several hours. The longer this soup sits, the better it gets. Serve chilled with a dollop of sour cream and some grilled bread slices. Garnish with an extra drizzle of harissa oil.
